Definitions
| Brown Sugar Syrup | Mix 1 pound dark sugar and 16 ounces spring water in a saucepan and heat gently, stirring until the sugar dissolves. Remove from heat. Cool and store in the refrigerator between uses. Good for two weeks. |
| Compound Butter | Soften 1 pound of butter in a stainless-steel mixing bowl and mix in 1 teaspoon each of ground cinnamon, nutmeg and allspice and 1/2 teaspoon of ground cloves. Add 1/4 cup of dark brown sugar and mix well. Prepare a cookie sheet with wax paper and spoon out heaping teaspoons onto the wax paper. Cool in the refrigerator and remove 30 minutes before use. |
| Simple Syrup | Take a half cup of superfine sugar. If you do not have superfine sugar, grind up table sugar with a mortar and pestle. Mix it with an equal amount of water. Shake it for a a few minutes, then let it sit and settle. Once it settles, shake it again. Keep refrigerated, should last two weeks. Used in a lot of drinks. |
